Chicken Fry – Assamese Style

INGREDIENTS

  1. CHICKEN 500 grams
  2. CURD 500 grams
  3. CURRY LEAVES (Chopped) 6 to 7
  4. GINGER & GARLIC PASTE 2 Table Spoon
  5. COLOR RED CHILI POWDER 2 Table Spoon
  6. CUMIN / ZEERA POWDER 1 Tea Spoon
  7. CURRY LEAVES 2 to 3
  8. SALT (Namak) 1 Tea Spoon
  9. BLACK PEPPER POWDER (Kali mirch) 1 Tea Spoon
  10. RICE FLOUR 3 Table Spoon
  11. Oil To fry

PROCEDURE

  1. Clean the CHICKEN.  Add the CURD, GINGER & GARLIC PASTE, CURRY LEAVES to the CHICKEN and mix it well. Then Add the COLOR RED CHILI POWDER and mix it till the color changes.
  2. Add the CUMIN / ZEERA POWDER for the aromatic fragrance and add salt as per taste to the mixture and mix it well.
  3. Then leave the chicken to settle down with the marination for the CHICKEN  to get tendered. Refrigerate the marinated CHICKEN for 45 minutes to 1 hour. After refrigeration add the RICE FLOUR and mix it well. Now deep fry the chicken.
  4. Now for the tossing take 2 to 3 table spoons of oil and add 1 GREEN CHILI, GINGER(Chopped) and 2 to 3, CURRY LEAVES to it and mix it well. Now add the fried CHICKEN to the tossing and toss well. CHICKEN 65 is ready to serve .
